Armadillo Eggs

  • 1/2 lb grated Monterrey Jack cheese
  • 1/2 lb pan sausage
  • 1 1/2 cups Bisquick
  • Large can whole jalapeños
  • Pork flavored Shake and Bake
  • 2 eggs

Cut peppers in half lengthwise and take seeds out. Stuff with cheese. Mix sausage and Bisquick and remaining cheese and roll around peppers. Roll in Shake and Bake. Dip in eggs that have been whipped with fork in small bowl. Roll in Shake and Bake again and bake at 350 degrees until brown.
