Candied Sweet Potatoes

Broil @ 500 from middle rack for 3-4 minutes

  • 3-4 lbs sweet potatoes
  • 1 cup brown sugar
  • 1 cup regular sugar
  • 1/2 cup butter
  • 1 tsp salt
  • 1 Tbsp cinnamon
  • 1 bag marshmallows

Peel and cut sweet potatoes into 2 inch chunks, slice 1/2 inch thick. Boil potatoes until tender, but not mushy. Drain and keep 1/2 – 3/4 cup water. Add brown sugar and regular sugar to reserved water. Cook down sugar with butter, salt, and cinnamon. Boil about 10-15 minutes. Spray 9×13 pan with Pam and put sweet potatoes in pan. Pour sugar syrup on top. Bake at 350 degrees for 30 minutes. Add marshmallows and broil until toasted.
