Easy Crab Cakes

2 (6oz) cans fancy white crabmeat, drained
8 saltine crackers, crushed
1 Tbsp all-purpose flour
1 egg
1 Tbsp yellow mustard
1 tsp dried dill weed
Dash hot red pepper sauce
4 Tbsp olive oil

In a large bowl, combine crabmeat, crackers, flour, egg, mustard, dill, and hot pepper sauce. Stir to blend. Chill in refrigerator 1 hour. Shape into 4 patties. Cook in olive oil in nonstick skillet over medium heat, about 6 minutes on each side. Serve with your favorite seafood sauce. Makes 4 small servings or 2 large servings.
