Falcon Steak

4 – 5 strips bacon
1 lb ground meat
fresh mushrooms (optional)
1 onion
1 bell pepper
carrots
potatoes
4 – 5 Tbsp butter

Line an iron skillet with 2 sheets of aluminum foil criss-crossed leaving enough excess to fold together on top. Place ingredients in order as listed, finishing with salt and pepper. Fold foil over top and pat down tight. Cook on stove until you hear the bacon sizzle then turn burner down and cook about 45 minutes. This recipe originated with Rich Smith and Les Duncan at Falcon State Park in south Texas while dove hunting and fishing. It’s an excellent dish to prepare on a Coleman stove and if you are careful serving, there is no skillet cleanup.
