Mexican Wedding Cookies

1 cup pecans
1 cup flour
¾ cup sugar
¼ tsp cinnamon
1/8 tsp salt
½ cup unsalted butter, room temperature
1 cup powdered sugar

In a food processor, pulse pecans, flour, granulated sugar, cinnamon, and salt until mixture resembles coarse meal. Add butter and pulse until a dough forms. Refrigerate dough until firm. Preheat oven to 325°.
Roll dough into 1 Tbsp balls. Bake 20 to 25 minutes. Let cookies cool, then roll twice in powdered sugar.
