Mock Éclair

2 small boxes French Vanilla Instant Pudding mix
3 cups skim milk
16 oz lite Cool Whip
1 box graham crackers

Line 9x 13″ pan with graham crackers. Mix pudding mix with milk and fold in cool whip. Spread ½ mixture over crackers. Add another layer of crackers, then the rest of the pudding mix. Arrange more crackers on top and spread chocolate filling over crackers

Chocolate filling:
2 squares chocolate
3 Tbsp oleo
2 Tbsp milk
2 Tbsp corn syrup
1 ½ cup powdered sugar
10 tsp vanilla

Melt chocolate, oleo, milk, and corn syrup in microwave. Add powdered sugar and vanilla. Spread on top layer of graham crackers. Let set in refrigerator for 24 hours before serving.
