Jalapeño Cornbread

  • 1 pkg cornbread mix (such as Morrison’s corn kit)
  • 1 egg
  • 2/3 cup grated cheddar cheese
  • 1/2 cup onions, chopped fine
  • 2 Tbsp chopped jalapeño (or less, can be either fresh or pickled)
  • 1/2 tsp baking powder
  • 2/3 cup milk

Mix all ingredients together. Have pan oiled and ready to pour in mixture because the baking powder starts working right away. I use my scone pan and it’s PERFECT. Bake at 425 degrees for 15-20 minutes.
