Spinach Quiche

8 oz pkg frozen spinach
4 oz can mushroom stems & pieces, drained-
½ cup chopped onions
1 cup shredded cheddar cheese (or your choice)
1 can evaporated milk
¾ cup Bisquick mix
3 eggs
1 tsp salt
¼ tsp pepper
1/8 tsp garlic powder

Cook spinach until barely done and drain. To the 10″ quiche pan, add the spinach, mushrooms, onions and cheese. Mix well. Combine the remaining ingredients and beat 15 seconds in blender on high, or food processor… or beat 1 minute with hand mixer until smooth. Pour over spinach mixture. Bake on 400° for 30-35 minutes until knife comes out clean when inserted between center and edge of the pan. Cool 5-10 minutes before cutting. Makes 6 to 8 servings.
