- 3 cups flour
- 1 tsp salt
- 3 tsp cinnamon
- 2 cups sugar
- 1 tsp soda
- 3 eggs, well beaten
- 2 (10 oz) pkg frozen strawberries
- 1 1/4 cup vegetable oil
- 1 1/4 cup chopped pecans
Preheat oven to 350 degrees. Sift flour, salt, cinnamon, sugar, and soda together. Make a well in dry ingredients. In separate bowl, mix together eggs, strawberries, oil, and pecans. Grease and flour bottom of two large loaf pans. Pour wet ingredients into dry and mix until just moistened. Pour into pans and bake for one hour.
*You can also use 6 mini loaf pans and bake for 40-45 minutes
